Coconut Mochi Cake

  • Preheat oven to 350F, grease square baking pan.
  • Mix dry ingredients:
    • 1 lb - sweet rice flour (Mochiko or Bob’s Red Mill)
    • 2 cups - sugar
    • 2 tsp - baking powder
  • Mix wet ingredients
    • 1 stick - unsalted butter, melted and cooled
    • 1 12 oz - coconut milk
    • 5 eggs beaten
    • 1 tsp - vanilla extract
  • Combine dry and wet ingredients, bake for 1 hour until the toothpick says its done.
