Coconut Mochi Cake
- Preheat oven to 350F, grease square baking pan.
- Mix dry ingredients:
- 1 lb - sweet rice flour (Mochiko or Bob’s Red Mill)
- 2 cups - sugar
- 2 tsp - baking powder
- Mix wet ingredients
- 1 stick - unsalted butter, melted and cooled
- 1 12 oz - coconut milk
- 5 eggs beaten
- 1 tsp - vanilla extract
- Combine dry and wet ingredients, bake for 1 hour until the toothpick says its done.
